====== Ingredients ====== For the ragù * 2 tbsp olive oil * 1 tbsp butter (or vegan butter) * 1 large yellow onion, finely diced * 4 cloves garlic, minced * 1 lb (450 g) mixed mushrooms — cremini, oyster, shiitake, and portobello — chopped small * 2 tsp smoked paprika * 1 tsp soy sauce * ½ tsp chili flakes (optional) * 1 tbsp tomato paste * ½ cup dry red wine (or vegetable broth if abstaining) * 1 cup crushed tomatoes * 1 cup vegetable broth * 1 tsp thyme leaves (fresh if possible) * 1 bay leaf * Salt and black pepper to taste * A handful of chopped parsley for garnish For the polenta * 1 cup coarse cornmeal (polenta grind) * 4 cups water (or 3 cups water + 1 cup milk for richness) * 2 tbsp butter * ½ cup grated Parmesan or pecorino (or nutritional yeast for vegan version) * Salt to taste
