Baking plain muffins is a simple and delicious way to enjoy a warm and fluffy baked good. Here's a basic recipe for plain muffins: Ingredients: - 2 cups all-purpose flour - 2 teaspoons baking powder - 1/2 teaspoon baking soda - 1/2 teaspoon salt - 1/2 cup granulated sugar - 1/2 cup unsalted butter, melted and cooled - 2 large eggs, room temperature - 1 cup milk, room temperature - 1 teaspoon vanilla extract Instructions: 1. Preheat the oven to 375Β°F (190Β°C). Line a muffin tin with paper liners or grease with cooking spray. 2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside. 3. In a large bowl, whisk together the sugar, melted butter, and eggs until well combined. Add the milk and vanilla extract, and whisk until smooth. 4. Add the dry ingredients to the wet ingredients and stir until just combined. Do not overmix, as this will result in tough muffins. 5. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full. 6. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. 7.
